Each of their vineyards has its own name and produces a certain wine. Terre Del Cereolo is their best cru. They use quite a large variety of local grapes: Corvina, Corvinone, Rondinella, Molinara, Negrara, Croatina, and Rossignola. The wine is raised in new barriques for 18 to 20 months and then bottled without filtration. It can be cellared for 6 to 7 years.Its complexity is enormous and you can taste overripe prunes, while the texture is very thick and the finale has aromas of cannelle and chocolate. Other characteristics include a very deep garnet color, aromas of licorice and tobacco, a full body with unusual flavors due to the varietals of Valpolicella.
